Chickpea Veggie Salad-in-a-Jar

Chickpea Veggie Salad-in-a-Jar | The Blonde Buckeye

One of the most popular posts ever was my Layered Salad-in-a-Jar.  Even though it’s not the fanciest of recipes, it is probably one of the most practical & useful recipes.  This new combination is just as good, if not better than the other one too.  I made 3 jars on Sunday, they took me a total of maybe 15 minutes & I had lunch for more than 1/2 the week.  The best part is, I actually look forward to eating them.  Healthy & delicious!  I’d love to know what your favorite salad combinations are?
