had to make the gingerbread cookies for the holidays, as I do every year.  My grandma’s old newspaper clipping never fails.  But this time, I wanted to change it up just a tad with some Gingerbread Snowflake Cookies.  They were delicious, per the usual, plus I piped a really easy royal icing to add a lil’ somethin’. Topped off with some white sprinkles, gingerbread snowflakes are perfect for the holidays.

ROYAL ICING

Ingredients
  • 4 Tbsp meringue powder
  • ⅓ cup water (+ more if needed)
  • 1 lb powdered sugar, sifted
  • ½ tsp light corn syrup
  • ¼-1/2 tsp clear vanilla extract
Instructions
  1. Use a stand mixer with the paddle attachment
  2. Combine meringue powder & water into the mixer bowl
  3. Mix, starting on low moving to medium-high, until foamy
  4. Slowly add sugar, mixing as you go
  5. Next add the syrup & extract
  6. Beat on high until shiny peaks form
  7. Transfer to a squeeze bottle or a pastry bag with a small icing tip
  8. Design away to your heart's content
  9. Add sprinkles (or other goodies) while icing is still wet
  10. Allow these to set for several (& I mean several) hours or overnight before stacking
