Nut Butter-Banana Freezer Fudge | The Blonde Buckeye

Yum.  These little gems are so good, & it’s healthy too!  Unless of course you eat the whole batch at once, then, not so much.  I used almond butter this time, but I have also used peanut butter & it’s just as delightful.  Keep in mind, this doesn’t hold up so well at room temperature.  It should go from the freezer directly into your mouth.

Nut Butter-Banana Freezer Fudge
 
Makes about 12 mini cups

Ingredients
  • 1 cup raw nut butter (almond, peanut)
  • ¼ cup melted coconut oil
  • 1½ Tbsp raw honey
  • ½ tsp salt
  • ½ tsp vanilla extract
  • 1 small banana, cut into 12 slices
Instructions
  1. Prepare a mini muffin tin with mini muffin papers
  2. In a medium sized bowl (a pouring spout helps) mix first 5 ingredients
  3. Pour or spoon nut mixture into prepared paper cups
  4. Place a banana slice on top of each cup & press down lightly
  5. Stick entire pan in the freezer for 45 minutes to an hour
  6. The paper cups will pop right out with a little help
  7. Serve cold right out of the freezer
