As you might know, I enjoy a good food holiday.  Any excuse to makes S’mores & things like that are always welcome in my home.  So when I realized that March 1st is National Peanut Butter Lover’s Day, I had take full advantage & celebrate with Peanut Butter Banana Waffles (duh).  I didn’t want to take any chances with experimentation today, so I did the sensible thing & went with something I know; waffles.  Because waffles & I always get along, especially when peanut butter’s involved.

Peanut Butter-Banana Waffles with Peanut Butter Glaze
 
Makes 4 waffles

Ingredients
  • WAFFLES:
  • ¾ cup AP flour
  • ¼ cup Whole Wheat flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 2 Tbsp melted butter (cooled)
  • 3 Tbsp creamy peanut butter
  • 1 cup milk
  • 1 egg
  • ½ ripe banana (slice the other half for garnish)
  • 1 Tbsp honey
  • ¼ tsp vanilla extract
  • GLAZE:
  • ½ cup powdered sugar
  • 1 Tbsp creamy peanut butter
  • 2 Tbsp milk
Instructions
  1. WAFFLES:
  2. Preheat waffle maker
  3. Combine flours, baking powder,baking soda & salt in a medium bowl
  4. In a blender combine butter, peanut butter & milk, blend until smooth
  5. Add egg, banana half, honey & vanilla to blender & blend until smooth
  6. Gently pour wet ingredients into the dry & mix until just combined
  7. (Follow the waffle maker instructions to cook, as each one is different)
  8. GLAZE:
  9. Combine ingredients for glaze into a medium sized bowl
  10. Whisk until smooth (add more milk if needed)
  11. Plate waffles, drizzle with Peanut Butter glaze & top with sliced banana

  1. Interesting recipes. I am a great fan of peanut butter myself (with or without the chocolate), but looks like there are several recipes here that are worth giving a try. (Not really sure about peanut butter and bacon though).
