Peppermint Bark Rice Krispies

This was one of those recipes that I created in my head, attempted to execute it, then it started to go terribly wrong, but then I saved it at the last minute & it turned out to be insanely delicious.  Ahhh the highs & lows of baked goods (or not baked, in this case).  I guess what really matters is the end result, so in that case, Peppermint Bark Rice Krispies were a success!

Peppermint Bark Krispies

Ingredients
  • 3 cups Rice Krispies cereal
  • 16 oz white chocolate (chopped or chips)
  • 10 oz mini marshmallows
  • 1 Tbsp butter
  • 8 oz peppermint bark (chopped)
  • sprinkles (optional)
Instructions
  1. Prepare a 9 x 9 square dish with wax or parchment paper
  2. Leave several inches to hang over each side for easy removal
  3. Melt the white chocolate chips (using a microwave or double boiler)
  4. In a small saucepan, melt 2-4 oz mini marshmallows with butter
  5. Place cereal into a large bowl
  6. Pour melted chocolate & marshmallow mixture over cereal
  7. Mix until coated (without crushing cereal)
  8. Allow mix to cool for a few minutes
  9. Add in remainder of marshmallows, 4 oz chopped bark & mix well
  10. Transfer cereal mixture into prepared dish & smooth out top
  11. Melt the remaining bark until smooth
  12. Pour the bark over top of cereal (either drizzle or smooth out)
  13. Top with sprinkles
  14. Place in the fridge & allow to cool for at least 1-2 hours
  15. Serve cold or at room temperature
