I realize that some of you may not know what Frisch’s Big Boy is. Frisch’s was Cincinnati, Ohio’s first Drive-In restaurant in 1946. For all I know, you may only be familiar with Bob’s Big Boy. So I just want to clear things up: Frisch’s Big Boy is the best Big Boy. Sorry. I can say this because I have also had Bob’s Big Boy also. Living in California, but being a girl from the midwest, fall is about the only time of year that makes me miss having 4 true seasons. The super humid summers & gray, dreary winters? Not so much… But around this time, I dream about the shades of orange trees all around & the slightly brisk breeze that indicates the coming of the colder weather. When I first started experimenting with baking & cooking, whenever I made a recipe that used buttermilk, I always just used regular milk instead. Whatever I had on hand. I thought to myself, there is no way I’m buying that entire, big carton of buttermilk, just for this one recipe. I figured milk was milk. Well, let me tell you people, it is not. Buttermilk makes a world of difference. It’s more acidic than regular milk, which is great for everything from marinating chicken, to using it for biscuits or pancakes. Another hatch chile recipe! But the good news is, you could totally use other kinds of chiles, like anaheim, or even a bell pepper works. Anything goes here. But in addition to these being a nice change from the ever-popular stuffed bell pepper, these are incredibly good WHILE being healthy. Did you know that green chiles actually have more vitamin C than citrus fruits?! Neither did I. I love it when things that I love also have amazing health benefits.
When I’m in the mood for brunch (which is always), I always have an internal struggle between savory options like eggs/bacon/omelette, or sweets like waffles/french toast/pancakes. It’s a constant dilemma. I think I may have come up with the perfect solution by adding the savory into my sweet. And it was awesome. I am a “breakfast person”. I NEED breakfast in the morning to survive even a few hours. Or I get grumpy. I never understood those that say they aren’t “breakfast people”. It’s the most important meal of the day people. It’s a fact. More often than not, I like eggs in the morning. They are filling, healthy & they start my day off on the right foot. Do I always have time to cook up some eggs in the morning? No. Actually, almost never. I’m also a “I hit the snooze button several times” person. That’s why preparation is key here folks. You just whip these up on a Sunday night, and you have your breakfast ready. You just pop it in the microwave to reheat it. Done-and-done.Continue Reading
Hands down, my husband’s favorite flavor combination is peanut butter & chocolate, as far as sweets go (otherwise, I would just say meat in general). Although we don’t typically go for a store-bought candy bars for sweets, Reese’s is his absolute favorite. So I wanted to make a homemade version, but a little healthier (& with a lot less ingredients). I used dark chocolate & subbed out the peanut butter for almond butter. The combination of the rich dark chocolate & smooth almond butter, with a pinch of sea salt sets this treat over the edge. The honey gives it a mild sweetness, while it still tastes very decadent. I made mini cups & I’m so glad I did, because these guys are RICH. Just one definitely satisfies even the biggest sweet tooth.Continue Reading
