Sometimes I over-think things. Like for instance, are these technically whoopie ‘pies’? They are not your traditional whoopie pie base. Those are more like a cupcake batter, with a cupcake texture. These are actually cookies, so I guess these are more like cookie pies, or sandwiches… but at the end of the day, does it really matter? I don’t think so, let’s be honest. Everyday weekday, I start out with a spinach-blueberry smoothie and either scrambled eggs, oatmeal or some other ‘healthy’ whole-grain cereal. So on the weekends, sometimes I need a treat. Since I love love LOVE breakfast food in general, it can be anything from waffles and pancakes to an omelet, or both. It just breaks up the monotony from the week. And it makes me super happy.

These are technically ‘Chocolate Lucky Charms Marshmallow Treats with Mint M&M’s and White Chocolate Drizzle’, but I didn’t want to get carried away with the name. It might take away from how crazy delicious these are. Also, you could make a hundred different variations of these. Any cereal, any candy, and any drizzle. The marshmallows are the glue that hold this masterpiece together though, so you probably don’t want to sub those out (and why would you want to?).

Probably one of my favorite things right now is cereal. I would eat it for breakfast, lunch & dinner if that was considered a well-balanced diet. So it only seems natural to use it for treats too. These are Rice Krispies treats, elevated a few notches. With the addition of white chocolate in the bars, plus drizzled on top, it breathes new life into an old classic. Pop them on a stick you have super cute treats for a party or shower.
