Hey guys, I’m back! It’s been awhile since my last post. Like, a reeeally long time. Not because I don’t love you, or because I don’t want to share delicious recipes with you, but because honestly, life has been quite busy. By busy, I mean I had another baby boy last year. And quite honestly, kids take up a lot of time, especially 2 crazy boys under 3. Just look at this little goober… I can’t. He’s even older than this now, and I think our lives are finally getting into a better routine! It takes awhile to figure out the new dynamic when you add another family member.

So let’s get down to business… the treats.

Unicorn Rice Krispies Treats | The Blonde Buckeye

I mean, Unicorn Rice Krispies Treats? Whaaat!? They are so pretty and whimsical (obviously), and they would be so cute for a baby shower or party. Most of all though, they’re so freaking good! They are extra soft, because I hate a hard Rice Krispies Treat, am I right? That is the worst. I used traditional white marshmallows PLUS those cute pastel colored ones! Those ones are kind of fruity too, which gives these a slightly different flavor, it’s really good. Then I topped them with white chocolate drizzle, and finished them with my Unicorn Sprinkle Mix. My husband and I were going to share them, but we ended up just keeping most of them. Sometimes you just don’t want to share.

Side note, I love making sprinkle mixes! I have such a variety of sprinkles in my cabinet, so I just make a little mix whenever I make something, based on the theme or colors, whatever. This is my Unicorn Mix. I think it just gives your treats something special. Plus it’s so easy to do! Unicorn Rice Krispies Treats
Makes one, 9"x13" pan. Cut in squares.
  • 4 Tbsp Butter
  • 1-10.5 oz bag of White Mini Marshmallows
  • About 2 cups Pastel Mini Marshmallows (reserve the rest of the bag for later)
  • 6 Cups Rice Krispies Cereal
  • About ½ cup White Chocolate Chips
  • Sprinkles
  1. Prepare a 9" x 13" dish by spraying it with nonstick cooking spray and/or lining it with parchment or wax paper (I do both).
  2. In a large saucepan, melt butter over low-medium heat. Once butter is melted, stir in white marshmallows. Continue stirring until marshmallows are also melted and combined with butter.
  3. Remove from heat & add the 2 cups pastel marshmallows.
  4. Fold in the cereal & try to get all the cereal coated. Continue to fold mixture until everything is mixed and evenly distributed.
  5. Transfer cereal mixture to prepared dish. Using your hands or a sturdy spatula to gently press mixture in the pan. Don't compact it, just lightly press to make it somewhat even.
  6. While its still warm, add another layer of pastel marshmallows. One solid layer, anymore won't stick since they won't be touching the cereal layer.
  7. Melt the white chocolate and drizzle over the marshmallow layer. Immediately top with sprinkles.
  8. Let the dish sit at room temperature for several hours or refrigerate until bars are set & completely cooled. Once it's ready, cut into squares.
* Store in an air-tight container at room temperature, for up to 2 days.
