Hey guys, I’m back! It’s been awhile since my last post. Like, a reeeally long time. Not because I don’t love you, or because I don’t want to share delicious recipes with you, but because honestly, life has been quite busy. By busy, I mean I had another baby boy last year. And quite honestly, kids take up a lot of time, especially 2 crazy boys under 3. Just look at this little goober… I can’t. He’s even older than this now, and I think our lives are finally getting into a better routine! It takes awhile to figure out the new dynamic when you add another family member.

I love making fun things with cereal, probably because I LOVE cereal. All kinds. Healthy varieties and the sugared-up kinds. Lucky Charms, Cookies ‘n Cream, Chex and Fruit Loops were all super fun to play with, but one of my absolute favorites is Fruity Pebbles. They’re actually really versatile! If you pulse them in a food processor, you can basically turn them into fruity flour or less for fruity sprinkles, which could never be a bad thing. Or just leave them as they are. They’re awesome as a topping or an ingredient.

You know, I actually meant to use regular Birthday Cake Chocolate Oreos, but they didn’t have them, so I thought ‘Hey why not try Birthday Cake Golden Oreos?’ I have to say I’m pretty glad, these were the perfect vanilla-birthday cake flavor. They didn’t even need chocolate, if you can believe that. But of course either will work.

I finally got a bundt cake pan… I know, it’s crazy that I didn’t before. So now that I do, I had to try it out as soon as possible. I wanted something with both fruit and chocolate, so in the spirit of chocolate covered strawberries, chocolate chips with strawberries sounded like a delicious pairing. And it was! A dense moist cake with tart strawberries and decadent chocolate flecked throughout. Then I glazed mine with a sweet vanilla icing, and topped it with fresh blueberries and raspberries with a sprinkle of powdered sugar. The best of all things both sweet and fresh.

Magic Bars (GF/V/SF)

It’s been so long since I’ve posted! Sorry don’t be mad at me… I’m not as great at this allergen-free baking thing as my ‘normal’ baking. I have a lot more fails that aren’t worthy to post on here! Luckily we will resume our normal/ traditional recipes shortly. For anyone that was curious, or is going through a similar situation, my son did grow out of all his food allergies by his first birthday! We tested each one slowly and now he can eat everything…. and does. That is one hungry child 😉

Today though, we will explore an old favorite of mine in a (mostly) allergen-free version (it does contain nuts). My mom makes the best magic bars (some call them 7-layer bars) every Christmas. Even though she just follows the standard recipe, I’m sure they’re probably better because she makes them. It starts with a crust (graham cracker crumbs & butter usually), then you top that with chips (chocolate & butterscotch and/or peanut butter), then pecans or walnuts, sprinkled with coconut, and then you pour sweetened condensed milk over the top & bake it. They are one of my favorite bars everrr! So many delicious layers. Since I was on the allergen diet restrictions over the holidays, she did her best to make a few things I could still have, like dairy-free/ soy-free/ gluten-free Buckeyes and Peanut Butter Blossoms. I missed the Magic Bars though. And haven’t stopped thinking about them since! Umm seven months!? So after a few trial & error attempts, I made a version that is completely vegan, gluten-free and soy-free! The main point of difference in taste is definitely the crust. This is more of a shortbread cookie crust. Unfortunately the only gluten-free graham crackers I could find contained soy. Why does everything contain soy? I seriously want to know it’s purpose… Anyone know?

I love making these little 5″ cakes! It’s not quite as daunting as a big one, they’re oh-so cute and perfect for just a few people. Or they’re the perfect size for smash cakes too, for the little ones. Plus, one of the best parts about this recipe is you can also use it to make 12 standard sized cupcakes (just vary the baking time). Ever since the girl scout cookies starting popping up this season, I have been craving thin mints, or more specifically, mint chocolate. (and I’m sorry, but why do they not make gluten-free/ dairy-free girl scout cookies yet?).
