Here’s something about me, I love banana bread – but, don’t most people? But I mean, I LOOOOVE banana bread. Like, cannot be trusted around it. It’s probably one of my favorite things ever. Not only because it’s insanely delicious and versatile, but because it’s something that my mom has made me my entire life. It has some sentimental value as well. Growing up, she made it on a pretty consistent basis, plus for just about every holiday. But now that I live in a different state, it is something that she always makes for me when I visit. As you might know, I enjoy a good food holiday. Any excuse to makes S’mores & things like that are always welcome in my home. So when I realized that March 1st is National Peanut Butter Lover’s Day, I had take full advantage & celebrate with Peanut Butter Banana Waffles (duh). I didn’t want to take any chances with experimentation today, so I did the sensible thing & went with something I know; waffles. Because waffles & I always get along, especially when peanut butter’s involved.
Yum. These little gems are so good, & it’s healthy too! Unless of course you eat the whole batch at once, then, not so much. I used almond butter this time, but I have also used peanut butter & it’s just as delightful. Keep in mind, this doesn’t hold up so well at room temperature. It should go from the freezer directly into your mouth.
