Lemon Bars are one of those always good, traditional dessert items. They don’t seem that exciting, but it’s something that everyone seems to love. I felt like they needed to be exciting though. I’m on a slight delay this morning – I mean afternoon. I want go back to bed and start over tomorrow… I mean, I’m awake, but I don’t feel totally awake. Over the weekend we celebrated out first wedding anniversary. So I have an excuse, but that doesn’t make it any easier. Maybe if I started every Monday with waffles, it would help, at least a little bit. Especially if it were these Lemon Chia Waffles with Blueberry Compote. Fresh lemon, to get you all jazzed up – sweet and tart blueberry sauce – with the nutritional burst from chia seeds.
When I first started experimenting with baking & cooking, whenever I made a recipe that used buttermilk, I always just used regular milk instead. Whatever I had on hand. I thought to myself, there is no way I’m buying that entire, big carton of buttermilk, just for this one recipe. I figured milk was milk. Well, let me tell you people, it is not. Buttermilk makes a world of difference. It’s more acidic than regular milk, which is great for everything from marinating chicken, to using it for biscuits or pancakes. Is ‘lemony’ even a word? That’s neither here nor there… Lemony is about the best way to describe this salmon, because you know it’s gonna be fresh & you know it’s gonna be delicious. As most of you can probably agree, overcooked salmon is bad bad bad. It’s probably the reason why some people say “I don’t like salmon”. It can scar you for life. Now enter asparagus; one of my favorite vegetables. They pair together perfectly. And how easy is this prep? I made these adorable little cupcakes for a 1st birthday party & was so pleased at the way they turned out. Ironically, I used the same Strawberry Buttercream recipe from the same little lady’s baby shower. However this time I used it on a lemon cupcake, to make – you guessed it – Strawberry Lemonade Cupcakes.
Also, to try something new, I used the frosting method that looks like roses! How cute right? And sooo easy! Typically, you start piping on the outer edge of a cupcake & make your way to the center. But for these, you start from the inside, then go out, tapering off the end. It’s really easy & looks so pretty. Another great thing about this method is that it uses a lot less frosting. (**You could make half of the recipe below if you are using this technique).
