Description
In a foil packet, this Baked Salmon in Foil combines bright notes of lemon, garlic, and sumptuous butter to create a dreamy dish that comes together right in your oven! This is the ideal light Sunday supper that you can prepare and serve in no time!

- 2 lbs salmon fillet
- 1 tablespoon olive oil (extra virgin)
- 1 lemon (juiced or squeeze the first half – slice the other half)
- 3 tablespoon butter (unsalted)
- 2 tablespoon garlic (minced)
- 1 teaspoon each, salt & pepper (to taste)
Instructions
- Preheat the oven to 400 degrees Fahrenheit (205 degrees Celsius).
- Unfold a long piece of aluminum foil on a baking sheet. Lightly grease the area on the foil sheet where your salmon will sit with olive oil (this will keep your fish from sticking).
- Place the salmon fillet on the foil, centered. Pour the lemon juice over the salmon. Spread lemon slices and pats of butter down the fillet, then season with salt and pepper.
- Fold the foil end and edges up and over the salmon to form a “packet.” Use more foil if necessary; you must ensure that the “packet” is sealed.
- Place the wrapped salmon on a baking sheet in the oven and bake for 14 to 16 minutes at 400°F (205°C). (Notes on cooking times can be found here.)
- When your salmon is done, remove it from the oven and set aside for 5 minutes before serving and enjoying.
Notes
Cooking times will vary depending on the thickness of your salmon and your personal preference for how rare you like your salmon; I prefer mine a little rarer, 125°F (52°C) at most.
