Description

Classic Homemade Mac & Cheese baked to perfection in the oven with a simple, creamy cheese sauce.


Ingredients

  • ½ lb uncooked elbow macaroni , about 1 ½ cups
  • 3 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 1 1/2 cup milk , any kind
  • 3/4 cup half and half
  • 2 1/2 cups shredded cheddar cheese

Instructions

  1. Preheat the oven to 325°F and butter a square baking dish lightly.
  2. Cook the macaroni until it is al dente, as directed on the packet. Set aside after draining.
  3. In a medium saucepan over medium heat, melt the butter. Combine the flour, salt, and pepper in a mixing bowl. 2 minutes in the oven
  4. Slowly pour in the milk and half-and-half, stirring constantly, and cook for a few minutes over medium-low heat until the liquid is just slightly thickened. Remove from the fire and whisk in 1 cup shredded cheese until melted.
  5. Toss in the cooked macaroni noodles to coat. Half of the spaghetti mixture should be placed in the prepared baking dish. 12 cup cheese should be sprinkled on top. Add the remaining spaghetti and top with the remaining cheese.
  6. Bake for 15-20 minutes, or until the cheese on top is melted.
  7. Serve with your favorite veggie or a side salad of your choice.

Notes

A higher-quality aged cheddar cheese will have a richer flavor and a smoother texture. Milder and less expensive cheddar cheeses will have less flavor and a grittier taste.

Make use of freshly grated cheese. Store-bought pre-shredded cheese does not melt as well as freshly grated cheese, and grating the cheese helps it melt smoothly and evenly in the sauce.

Allow the cheese to come to room temperature. I like to grate the cheese first before proceeding with the dish. This allows it to come to room temperature while I make the white sauce.
