Description
This Veggie Grilled Cheese Sandwich is a tasty kids meal to share with only four ingredients, including a veggie that fits perfectly in. It has more nourishment in the filling and simply takes a few minutes to prepare. This is a fantastically simple dish!
Ingredients
- 1 tablespoon unsalted butter
- 2 slices sourdough bread (or whole grain)
- 2 slices cheddar cheese
- 2 tablespoons mashed sweet potato
Instructions
- Set a nonstick or cast iron pan over medium heat and melt the butter.
- On one piece of toast, spread the sweet potato. Put the cheese on top of the other. Place two slices of bread, toppings side up, on a prepared baking sheet. Swirl the bread gently to coat it with butter. Cook for approximately 3 minutes.
- Place the sandwich’s two halves together and press down slightly with a spatula. Cook for 3-4 minutes more, flipping as required, until both sides are golden brown.
- Remove the sandwich from the pan and cut it in half, into sticks (excellent for toddlers), or dice it into small pieces (good for older babies).
Notes
Use a smooth vegetable puree like Mashed Sweet Potato.
Use carrot puree, mashed butternut squash, broccoli puree, or finely minced broccoli to experiment with different flavors.
I normally melt the butter in the pan, but you could also spread it on both slices of bread.
