Description
Chebureki are traditional Russian comfort foods. Each flavorful, meaty turnover is brimming with traditional Russian flavors. Delicious and simple to prepare!

- 1 lb ground beef
- 1 lb ground pork
- ½ medium bunch of cilantro, chopped
- ½ medium bunch of parsley, chopped
- 1 large bunch of green onion, 1 cup chopped
- 1 tsp salt
- 1/4 tsp freshly ground black pepper
- 3 Tbsp milk
- 15 raw tortillas
Instructions
- Combine ground pork and ground beef in a mixing bowl with a paddle attachment or by hand.
- Combine the cilantro, parsley, and green onion in a mixing bowl. Season with salt, pepper, and milk.
- Putting Cherubeki Together:
- Melt butter in a large nonstick skillet over medium heat. Pour in enough canola to cover the bottom of the pan. To expedite the procedure, use two skillets.
- Distribute a heaping tablespoon over half of the tortilla. Spread the meat over half of the tortilla, leaving a 1-inch border on all sides.
- Brush water along the entire border of the tortilla, just enough to make it visible that it’s wet; otherwise, the tortilla will not seal.
- With a fork, glue the sides together. To prevent the tortillas from opening when frying, flip them over and seal the opposite side with a fork as well.
- Cook for 3 minutes per side over medium heat. You may need to alter your heat settings (not all ranges are made equal), but they should cook for around 3 minutes per side. When finished, place them between paper towels.
- They can get a little juicy on the inside, so take care not to get a lap-full of liquid when taking a bite.
