Description
Pan Fried Potatoes and Onions is a terrific side dish of fork-tender fried potatoes that goes well with almost any breakfast or dinner! The potatoes are a flexible side dish that goes well with a full roasted chicken as well as eggs and bacon!
Ingredients

2 lbs russet potatoes (washed and cut into Β½ inch pieces, cubed)

1 medium yellow onion (grated or finely chopped)

ΒΌ cup olive oil (more as needed,enough to cover the bottom of your frying pan)

Β½ teaspoon each, salt & pepper (to taste)

Β½ teaspoon garlic powder (to taste)

Β½ teaspoon smoked paprika (or paprika)
Instructions

Wash and cube potatoes, as well as grate a medium yellow or white onion. *Peeling the potatoes is optional.

In a large frying pan, skillet, or cast-iron skillet, heat the cooking oil over medium heat.

Season with salt, pepper, smoked paprika, and garlic powder (save the minced garlic for the uncovered cooking time unless you want to use it).

Combine the ingredients in a mixing bowl, then distribute them evenly around the bottom of the pan. Cook for 10 minutes, or until golden brown, covered with a tight-fitting lid.

After the potatoes and onions have cooked for 10 minutes while covered, uncover and toss them (add minced garlic, if using). Allow to finish uncovered for 5 to 10 minutes, or until potatoes are fork-tender and have reached your chosen tenderness level.

When the potatoes are done cooking, remove them from the heat and serve right away.
