- 4 cups sliced yellow squash
- ½ cup chopped onion
- ¼ cup water, or more as needed
- 35 buttery round crackers, crushed
- 1 cup shredded Cheddar cheese
- 2 eggs, beaten
- ¾ cup milk
- ¼ cup butter, melted
- 1 teaspoon salt
- ground black pepper to taste
- 2 tablespoons butter
Instructions
- Set oven to 400 degrees Fahrenheit (200 degrees C).
- Squash and onion should be cooked in a sizable skillet at medium heat. Add some water. Cook the squash covered for about 5 minutes or until it is soft. After thoroughly draining, place in a big basin.
- In a medium bowl, combine cheese and cracker crumbs. Cooked squash and onions are combined with half of the cracker mixture.
- Add milk and eggs to the squash mixture after combining them in a small bowl.
- Salt and pepper to taste, then stir in 1/4 cup melted butter. Pour into the baking dish that has been prepared. Add the remaining cracker mixture and 2 tablespoons of butter before sprinkling.
- Bake for about 25 minutes in the preheated oven or until just barely browned.
