Description
These grilled tofu skewers are a delicious and simple weekday dinner thanks to an easy barbecue marinade. Light the grill and serve with your favorite summer vegetables!

- 14 oz extra firm tofu, drained and pressed
- ¼ cup tomato paste
- ¼ cup ketchup
- 3 tbsp apple cider vinegar
- 3 tbsp soy sauce or tamari (we used low sodium)
- 3 tbsp olive oil
- 2–3 teaspoon sriracha
- 2 tbsp coconut sugar (or brown sugar)
- 2 tsp chili powder
- ½ tbsp dried mustard
- 1 tsp smoked paprika
- 1 tsp salt
- ½ tsp cumin
- ½ tsp garlic powder
- ½ tsp onion powder
- Optional: ½ teaspoon turmeric
Instructions
- Remove the tofu from its box and thoroughly drain it. Allow to air dry. Cut the tofu block in half widthwise. Wrap both sides in a clean towel or several sheets of paper towel, and place something heavy on top, such as a cookbook or two. Press for at least 30 minutes, but no more than an hour. If the towel becomes too wet, replace it with a dry one halfway through.
- To prepare the tofu for the skewers, cut each block into thirds lengthwise. Then, cut each length into thirds to get nine equal-sized blocks (18 total).
- Meanwhile, combine all marinade ingredients in a mixing bowl.Toss the tofu cubes with 14 of the marinade mixture and set on skewers. Preheat the grill to medium and set the skewers on it. While grilling, brush the skewers with extra marinade on all sides once or twice.
- Grill for a few minutes on each side, or until slightly browned and done to preference. Serve with additional barbecue sauce.
Notes
Leave off the sriracha and/or chili powder for a less spicy (kid-friendly) version.
