Description

BBQ Meatloaf is packed with sautΓ©ed peppers, onions, and garlic and basted with barbeque sauce created from scratch. Grilled or baked, this dish is delicious. A delicious gluten-free meal for the whole family!


Ingredients

  • ΒΌ cup olive oil
  • 1 large onion, diced
  • 1 cup red bell peppers, diced
  • 2 garlic cloves, minced
  • 2 pounds lean ground beef
  • 2 large eggs
  • 2 tablespoons Italian seasonings
  • 2 teaspoons black pepper
  • 1 teaspoon kosher salt
  • 1 teaspoon granulated garlic
  • Β½ cup homemade barbecue sauce

Instructions

  1. In a skillet, combine the olive oil, onion, red peppers, and garlic and simmer, stirring frequently, until the veggies are softened. Allow to cool slightly before serving.
  2. Combine ground beef and beaten eggs in a large mixing bowl.
  3. Add the cooked onions and peppers, as well as the Italian seasonings, pepper, salt, and garlic granules.
  4. Mix thoroughly and shape into a loaf on a parchment-lined baking pan.
  5. Preheat the grill to 300-350 degrees Fahrenheit or the oven to 375 degrees Fahrenheit.
  6. Cook meatloaf 25 minutes.
  7. Brush top and sides with homemade barbecue sauce.
  8. Cook for another 30 to 45 minutes, or until the internal temperature reaches 165 degrees.
  9. Allow 10 minutes for the meatloaf to rest before slicing.
