Description

You’ll enjoy these Homemade Crispy Corn Nuggets if you like corn fritters. Simply combine fresh or canned corn with a few pantry basics to make a fast batter, then fry to golden perfection. This fried corn nugget recipe from the South is great as an appetizer, dessert, or side dish.

Ingredients

Scale

  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 tablespoon yellow cornmeal fine (see note)
  • 1 tablespoon white sugar (I used 1 tablespoon sugar and the nuggets are slightly sweet. You can add 2 more tablespoons of sugar if you’d like it to be sweeter)
  • 2 Β½ teaspoons baking powder
  • 2 eggs
  • 1/2 cup milk
  • 2 tablespoons unsalted butter melted
  • 1 Β½ cups corn cornels frozen or fresh (make sure to thaw them completely if using frozen ones)
  • vegetable oil for frying
  • optional powdered sugar for dusting

Instructions

Notes

  • If you don’t have cornmeal, use cornflour or additional all-purpose flour instead.
  • Line a baking sheet with parchment paper if using an air fryer. Place spoonfuls of batter on it and place in the freezer for 3-4 hours, or until solid. Then air fry at 400˚F for about 10-15 minutes.
