Place the shrimp on top of layers of paper towels to dry instead of patting it dry with a paper towel like you would before searing meat, and that, my friends, is the trick. This was a game-changer in and of itself. The following is what I’ll say.
DEFROST SHRIMP BEFORE COOKING
You have two alternatives when it comes to defrosting shrimp:
- To thaw the frozen shrimp, place them in the refrigerator. It may take many hours for the shrimp to thaw completely. Place the frozen shrimp in the fridge the morning of if you want to have shrimp for dinner that evening; however, if you want to have shrimp for supper the next day, place the frozen shrimp in the fridge to thaw overnight.
- Remove the frozen shrimp from its bag, and add them to a big bowl of cold water making sure they are submerged in the water. The shrimp will thaw gradually and ice crystals will form. This may take up to 20 minute or so.
Whichever option you choose for defrosting shrimp, empty the water from the bowl after about 20 minutes and run water over the shrimp to remove any ice crystals that you see then drain the water from the bowl.
TECHNIQUE FOR DRYING (SECRET TO PERFECT SEAR)
Line a baking sheet with layers of paper towels and set the thawed shrimp in a single layer on the baking sheet after carefully cleaning them. The paper towels will be able to absorb any moisture from the shrimp using this procedure.
To absorb any remaining moisture, pat the top of the shrimp dry with a paper towel.
Keep in mind that you should never thaw shrimp in the microwave. The shrimp’s texture may alter as a result of this.
SEARING SHRIMP
- Season with kosher salt, black pepper, and Cajun seasoning once the shrimp have been thawed and completely dried.
- In a medium-high-heat skillet, melt the butter and add the oil, swirling it around to coat the bottom of the pan.

- 1–2 tablespoon Cajun seasoning

Instructions

- Allow the shrimp to defrost for about 20 minutes in a dish of cold water. To get rid of any ice crystals that may have formed, drain the water from the dish and run cold water over the shrimp.
- Remove the digestive tract by carefully cutting a slit lengthwise on the shrimp’s underbelly and backside with a paring knife or steak knife. Discard the stomach and intestines. Rinse the shrimp thoroughly
- To absorb all of the moisture from the shrimp, place them in a single layer on the prepared baking sheet. Pat the shrimp’s surface dry with a couple of more paper towels.
- Season the shrimp with kosher salt, black pepper, and Cajun seasoning in a large mixing basin, tossing well to coat.
- In a medium-high-heat skillet, combine butter and grapeseed oil or olive oil. Swirl the pan with the frying oil as you go. In a single skillet, saute the shrimp for 2 to 3 minutes on each side. Cook for another 2 minutes on the opposite side of the shrimp. Turn the heat off.
- Transfer the shrimp to a serving bowl or platter after removing them from the skillet. If you leave the shrimp in the skillet, the residual heat will continue to cook them, causing them to become rubbery and overdone.
