I’ve made repeated unsuccessful attempts to coax recipes from my neighborhood Chinese eatery.

I’m too old to flip my hair and don’t have enough eyelashes to bat them in any way, but I do dial up the charm by smiling broadly, heaping on the compliments, and approaching people after I’ve placed a large takeaway order.

I’ve made no progress, alas.

So you can imagine how happy I was to learn about Woks of Life, a Chinese food blog operated by a Chinese-American family who formerly owned a Chinese restaurant! This recipe’s foundation was drawn from the Woks of Life Beef and Broccoli stir fry. A genuine recipe from a restaurant!

This Chinese beef and broccoli is also available in the majority of Chinese restaurants in the United States. This recipe is not only straightforward and easy to prepare, but it also tastes good!

CHINESE BEEF AND BROCCOLI THAT IS UNIQUE AND TRUE:

Unlike other American Chinese restaurants and recipes, this real Chinese beef and broccoli stir fry recipe uses more sauce. Jasmine rice is the ideal side dish. The meat is also exceptionally soft, supple, and juicy. Green and supple, broccoli. Now, you may try this beef and broccoli stir fry instead of ordering takeout.

BEEF AND BROCCOLI RECIPE COOKING TIPS:

  • Cook meat after at least 10-15 minutes of marinating.
  • When cooking broccoli, add salt and vegetable oil to the boiling water to keep the broccoli’s color green.
  • The broccoli shouldn’t be overcooked. The green hue will be gone if overdone. So, simmer the broccoli until it’s tender but still green.
  • Rinse with cold water to preserve the gorgeous green color of the broccoli.
  • Because beef and broccoli recipes pair best with rice, we prefer more sauce on them. A cup of water is added. If you like less sauce, you can cut back on the water and cornstarch used to thicken the sauce.

Beef and Broccoli Sauce

Chinese Beef and Broccoli has a very basic sauce foundation. The appropriate ratios are crucial in this case:

  • soy sauce
  • Mirin OR Chinese cooking wine (see recipe for substitutes);
  • sugar;
  • thickening using cornstarch or flour; and
  • A touch of Chinese five spice powder is what gives beef and broccoli their distinctive flavor.

What is powdered Chinese five spice?

Cinnamon, cloves, Szechuan pepper, fennel, and star anise are the five spices that make up this spice mixture (surprise, surprise?). It is a typical spice mixture that is no more expensive than other common spices and is available in supermarkets today.

The sauce serves as both the main sauce for the stir fry and a small amount of flavoring for the beef. Just lay it aside while you prepare the other ingredients; it doesn’t need to marinate.

The Ideal meat for stir-fries

I used a budget beef eye fillet (Australia – Harris Farms sells it for $20/kg), which is beautifully juicy and soft, excellent for stir fries, in the video and the pictures of the finished dish in this post.

Any beef piece that cooks quickly will work in this recipe. The general rule is: if you’d grill it and eat it like a steak, it’s ideal for stir fry.

But by adopting a little-known Chinese restaurant trick to tenderize beef with baking soda, you can easily make a Beef and Broccoli dish with inexpensive beef, even stewing cuts (!).

Every time you stir fry beef, it will be very soft, exactly like at your friendly neighborhood Chinese restaurant. It’s easy, highly effective, and delicious!

It’s okay that beef and broccoli aren’t authentic.

Although I haven’t traveled far in China, I can declare with sure that I never once saw beef broccoli on a menu there. In China, broccoli is actually quite pricey!

Therefore, I’m confident that Beef and Broccoli is a Westernized Chinese cuisine or simply a Western Chinese dish.

Regardless, it’s a popular Chinese takeaway dish, and for good reason. This is one of those dishes that appeals to people of all ages, with tender beef and juicy broccoli abundantly covered in a savory Chinese brown sauce with the distinctive flavor of Chinese Five Spice Powder.

Ingredients

SAUCE

  • 2 tbsp cornstarch / cornflour
  • 1/4 cup water
  • 1 tsp sugar
  • 1 tbsp dark soy sauce (Note 1)
  • 1 1/2 tbsp light soy sauce (Note 1)
  • 1 tbsp Chinese cooking wine (Shaoxing wine) (Note 2)
  • 1/8 tsp Chinese five spice powder (Note 3)
  • 1 tsp sesame oil (optional)
  • 1/8 tsp tsp black pepper

STIR FRY

  • 2 tbsp oil
  • 12 oz / 360g beef fillet, flank or rump (Note 4 for tenderizing option)
  • 1 garlic clove, finely chopped
  • 1 tsp fresh ginger, finely chopped
  • 35 cups broccoli florets (1 head), cooked (Note 5)
  • 1 cup water

  1. Place cornflour and water in a bowl then mix. Add remaining Sauce ingredients.

  2. Slice the beef into 1/4″ / 0.5cm thick slices. Place the beef and 2 tbsp of the Sauce into a bowl and set aside.

  3. Heat oil in a skillet over high heat. Add beef and spread out, leave for 1 minute until browned. 

  4. Stir beef for 10 seconds, then add garlic and ginger. Stir for another 30 seconds or until the beef is no longer pink.

  5. Pour Sauce and water into the skillet and quickly mix.

  6. When the sauce starts bubbling, add broccoli. Stir to coat the broccoli in Sauce, then let it simmer for 1 minute or until Sauce is thickened.

  7. Remove from heat immediately and serve over rice. Sprinkle with sesame seeds if desired.

Notes

  1. Dark soy sauce is more flavorful than light soy sauce. Both soy sauces can be substituted with all-purpose soy sauce or simply light soy sauce, but the sauce’s color will be lighter. Use some light soy sauce; dark soy sauce has a stronger flavor.
  2. Chinese stir-fry sauces require Chinese cooking wine as a key component; otherwise, they lack the authentic “restaurant” flavor. A great substitute is dry sherry, or cooking sake. If using mirin, leave out the sugar. (If you can’t drink alcohol, substitute low sodium chicken broth for 3/4 cup of the water.)
  3. A blend of five spices is called Chinese Five Spice Powder. It can be found in supermarkets’ herb and spice sections and doesn’t cost any more than other spices.
  4. Beef – As with any stir fry, you must use a good piece of beef because it cooks so quickly. For this recipe, rump, flank, sirloin, t-bone, and scotch fillet work well.
  5. Against the grain, cut the beef. The fibers in the meat are generally oriented in one direction when you look at it. The fibers of the beef should be facing you so that they are traveling from left to right. Next, cut perpendicular to the direction of the fibers, or through the fibers (see here for illustrative image). The beef is more soft after being cut in this manner!
  6. Chuck is not appropriate for slow cooking until it has been tenderized (see How to tenderize beef the Chinese restaurant way)
  7. If par-boiling, add the broccoli to a saucepan of boiling water, let it boil again for 40 or 1 seconds, depending on how tender you want your broccoli, then drain. While the broccoli is resting in the colander, the remaining heat will completely cook it.
