- Acorn Squash — This recipe serves two people. If you want to create more, get more acorn squash.

- Butter (1 tablespoon pat portion per acorn squash half) – Butter enhances the flavor of the acorn squash. But when has butter ever let you down?
- Light Brown Sugar (1 tablespoon for each acorn squash half) — Brown sugar has a pleasant flavor that complements acorn squash. It is far superior to white sugar. You’ll taste the difference immediately.
This dish serves two people one-half of a squash. So, if you need more, just multiply the recipe by the number of servings you require.

HOW TO COOK ACORN SQUASH IN THE MICROWAVE
When the microwave is so much faster than the conventional oven, who needs it? When you’re having one of those stressful evenings, rely on technology to assist you in quickly preparing dinner. Your hungry family will be relieved that dinner will not be served for several hours.
- Cut the acorn squash in half and remove the seeds by cutting it in half lengthwise.
- Leave as much meat in each half of the acorn squash as feasible. After coring the acorn squash, rinse it under the faucet.
- Place the acorn squash halves in a microwave-safe basin or plate, sliced side down, with 2 tablespoons of water. Cook for 5 minutes on high in the microwave, uncovered.
- Add 1 tablespoon each of light brown sugar and butter to each of the heated acorn squash halves in individual bowls. In the microwave, reheat for another 5 minutes on high. After heating, stab the acorn squash with a fork to see whether it’s soft. If necessary, continue to cook the acorn squash in 1-minute increments until it reaches your desired softness. For the greatest texture, the acorn squash should be lovely and squishy.
- Before serving, remove the acorn squash from the microwave and let it cool for about 5 minutes. *Be careful with your fingers; the bowls will be quite hot!
If desired, season with salt to taste. I also like to season the acorn squash with cinnamon and nutmeg on occasion. It’s also delicious drizzled with honey or maple syrup. Enjoy!

- The cooked acorn squash can keep for 3 to 4 days in the refrigerator. Cooked squash should be discarded if it is not wrapped within the first 1–2 hours of cooking. *At room temperature, bacteria develop swiftly!

Acorn squash should be boiled before freezing, therefore now is a great time to freeze your acorn squash in the microwave!
Cut the cooked acorn squash into bits and place them in an airtight freezer container or a freezer storage bag made of heavy-duty plastic.

- 1 acorn squash
- 2 Tbsp water
- 2 tablespoon butter (1 tablespoon portion each)
- 2 tablespoon light brown sugar (packed – 1 tablespoon portion each)
Instructions
- Cut the acorn squash in half and remove the seeds with a coring tool. Leave as much meat in each half of the acorn squash as feasible. After coring, give it a good rinse.
- In a microwave-safe basin or dish, place the acorn squash halves facing down with 2 tablespoons of water. Heat for 5 minutes on high.
- Add 1 tablespoon each of light brown sugar and butter to the warm acorn squash halves in individual bowls. In the microwave, heat for another 5 minutes on high. Check for tenderness with a fork after heating, and if necessary, heat in 1-minute increments until the squash reaches your preferred level of tenderness.
- Remove from the microwave and set aside for 5 minutes to cool before serving.
