Chakalaka is a traditional South African vegetable relish that goes well with bread, stews, meat, and other dishes. This post will teach you how to make it quickly and easily.
Ingredients
- 3 tbsp oil
- 1 onion finely chopped
- 2 cloves garlic crushed
- 50 g ginger finely grated
- 2 tbsp mild curry powder
- 1 red pepper finely chopped
- 1 yellow pepper finely chopped
- 5 large carrots (unpeeled but scrubbed and topped and tailed) grated
- 2 tbsp tomato purée
- 400 g can chopped tomatoes
- 2 sprigs fresh thyme leaves only
- 400 g can baked beans
- Salt and pepper to taste
Instructions
- Heat the oil in a pan over medium heat. Then add the onion and cook until it is translucent and softened.
- Combine the garlic, ginger, and curry powder in a mixing bowl. To combine, stir everything together.
- Mix in the peppers. Cook for another 2 minutes.
- Mix in the carrots. Stir everything together and make sure it’s all coated in curry powder.
- Toss in the tomatoes and tomato paste. To combine, stir everything together.
- Cook for 5-10 minutes. The mixture should be well combined and slightly thickened.
- Baked beans and fresh thyme are optional. Cook for 5 minutes.
- Turn off the heat. It can be served either hot or cold.
